Smoke is just unburned fuel, too much smoke is not good for the engine. Anything that causes the engine to run rich, or have more fuel in the fuel to air ratio will make it smoke. You can either put in more fuel by using a better lift pump, or using better injectors, or you can starve the engine of air (not recommended) by unhooking the turbo or putting a paper bag over the air filter. Smoke is just wasted power, a truck that burns all this extra fuel runs much faster. Note that the fastest duramax in the world blows little to no smoke.
White smoke is usually a sign of water in combustion chamber-check oil for any signs of water in oil

Their injection pump is set too rich, and lets more diesel into the engine than the engine can burn. The partially/badly burned diesel is what comes out as black smoke.
Black smoke, from any diesel, is the result of partially burned fuel. Overfueling will cause black smoke.
