In that Northstar engine, the temperature tends to swing wildly - it's all aluminum, so there is more thermal change. However, based on my 7 years of ownership of various Caddys and over 300,000 miles of travel in them, your temp, under normal conditions, will hover between 195 and 220 or so. Those engines can take a lot of heat, there's no real emergency until about 260 or so, with the proper 50/50 mix of coolant and water and with all other parts of the cooling system in good working order. The electric cooling fans don't come on LOW speed until 224 degrees, and they switch to HIGH at about 240. They come on automatically when the AC is switched on, however.
