If this is the Econoline van with an 4.9L Six cylinder engine, your gap should be approximately 0.042 inches. If you have the 5.8L V8, your gap should be around 0.044 inches. So as long as you're staying between 0.040-0.045 inches, you should be fine. Some people even gap theirs up to 0.050-0.060 inches if they have modified their engines.
I believe they sit on top of each spark plug.
