Assuming this is a 4.3L engine, bank 2 sensor 1 would be the first O2 sensor located in the exhaust header pipe on the passenger side of the engine.
Assuming you have the 4.3 engine, bank 2 sensor 1 would be the O2 sensor threaded into the exhaust pipe directly after the passenger side exhaust manifold.
It doesn't have a map sensor, it has a maf (mass air flow) sensor instead. The maf sensor would be located in the snorkel between the air filter box and the throttle body.
Drivers side
bank # 2 is the drivers side of the engine sensor # 2 is after the catalytic converter ( downstream )
The 98 S10 does not have a safety cut off (inertia switch).
it is the rear sensor bank 1 (the one after the converter)
Bank 1 on that Town car would be the passenger side of the engine. Bank 1 Sensor 1 would be the first O2 sensor in the passenger side exhaust after the engine but before the catalytic converter.

the iat sensor is located by the air filter in line to the the intake (the rubber hose between the filter and intake i have a98 s10 that i am working on that has a bad iat sensor you can tell it bad when you test it with a scan tool the one i had to replace was reading that the iat was at -40 below and it made my truck smell like gas
bank one is close to the fire wall sensor one is before the cat
The speed sensor on a 98 Jetta is located near the brake setup. It is on the passenger wheel area mounted to a bracket.
