Not sure if it depends on the engine, but on the 3800 V6 engine, the thermostat is right one top. Position yourself in front of the engine. To the right of the front spark plugs (the rubbery wires), you will see a sort of mound. There is a brass colored screw in the top and two screws holding it in.
It should be connected to a rubber hose, that connects the radiator to the engine. Underneath the mound in the thermostat. Just unscrew the bolts lift it up and use a screw driver to pop out the thermostat. Really simple to change.
