The oil light, in most or all vehicles, monitors oil pressure. That said, it will light up when the pressure is too low (or, more uncommonly, too high), or because there may be a fault in the monitoring system.
First check your engine oil level (on level ground). If the level is too low, and you step on the brakes or accelerate hard, the oil flows away from the oil pump's pick-up tube and causes the pressure to drop (not good for the engine), which causes the light to flash.
If your oil level is good, then you need to check the oil pressure sensor and its wiring to determine if there is a short being created by certain vehicle motions (like braking).

Probably because your oil level is really, really low and when you put the brakes on whatever drop you have left sloshes to the front of the engine so there is not enough left to register at the pump sender, and when you are in park you are only idling, so it is not creating enough pressure at the pump and the light comes on.
