You can not kill the monster in Multiplayer, it is simply to accompany the game and add a bit more colour to it. It can sometimes be distracting.
Blinding Polyphemus allows Odysseus and his men to escape from the cave without being detected by Polyphemus. Killing him would have likely alerted the other Cyclopes and made their escape more difficult. Additionally, blinding him adds an extra layer of humiliation and revenge for the harm Polyphemus inflicted on Odysseus and his crew.
It is random: Every time you kill a certain type of monster, you get a certain probability of getting the desired drop. I am not sure about the exact probability, but in any case, you might get it with the first monster you kill, or you may have to kill 10, 20, or even more.
after you kill one, press "O" on it's remains to "carve" it. you can carve it twice but most monster you can carve once only. boss monsters you can carve more than twice when you kill it.
