it happens by genetic mutation and slow evolution. imagine yourself an animal that can eat grapes and apple's, some of these animals like grapes better then apples and start eating more apples, while others do it the other way around. maby one day, one of the grape eaters has a genetic mutation allowing it to gain more energy from eating grapes then from apples, making the animal more of a specialist now, during the course of century's or millenia this difference can grow until the apple eaters and grape eaters wont mate anymore. at this point there are two species who have originated from just one, and because they don't mate anymore, genetic drift might change appearances or other aspects so they become not only dietary distinct but also visually distinct.
