They go through a special training, I don't know the training they go through but for a blind person's dog, they teach them that when a special harness is on they can't play, and they'll stay by the person in need.

Another example would be the German Shepard, I know one little thing of training they do.

The training is this, German Shepard are notorious for chasing cats, the training they do on them is this, they line up the German Shepards, then they let this cat eat some food right in front of them, it teaches them to stay where they are when they are told to. even if you try and give a service dog a treat, they won't eat it if there on duty.

Wish I knew what the training is called, probably didn't help you that much, but I though what the heck, it's worth a shot.

(*EDIT - Good help me, where do people get these answers from? If you don't know the answer, DON'T ANSWER THE QUESTION!

Now, the training service animals require are strict obedience training; socialization to stay calm around strange pets, people and different environments; potty trained and trained to go on command; must be calm in crowds; must be non-aggressive - service dogs can't be aggressive in any way because the public has the absolute right to feel safe around them; must be trained to tuck under chairs and tables; must be able to lie down and stay for long periods of time; and, most important of all, task trained to their handler's specific disabilities. You must be legally disabled under ADA standards to have a service dog and the dog must be trained to perform a task, that the handler cannot do themselves, that's directly related to and mitigates their disability. As of March 2011 only dogs, and in special cases mini horses, can be a service animal.
