Farmers, as most people responsible for a larger plot of land can live sustainably. That is, the needs of them and their families do not exceed the carrying capacity of their surroundings.
Often, in areas other than cities, particularly coastal areas there is plentiful seafood to supplement the animals and birds that live on the land. Thus, the farmer can eat well, and enjoy the recreational space around them more so than a city dweller.
Ultimately, if we are all aware of our planet's carrying capacity, and reduce, reuse and recycle responsibly, apply the correct technologies, and live and care for the land as an inhabitor of "spaceship earth" we can all live sustainably, and will take this knowledge to new lands beyond earth.
