I don't think there is a specific animal that is considered to "symbolize" self-sufficiency, but there is the common wisdom about squirrels stocking away nuts during the summer so that they have food during winter, which could be thought of as a form of self-sufficient behaviour.

In general, many grazing animals might be considered somewhat self-sufficient. You can put a goat in a field somewhere and go away for a month, and it will probably survive perfectly well without you, eating whatever is growing there (and anything else it finds) and sleeping in the open.
