Mammals and some other animals must return to the surface of the water to breath in oxygen. While they are under water they eat many things, other animals, algae, and detritus.
The environment must provide enough air, food and water for the animal. It is also important to have enough light if it is a plant eater as plants need light energy to make food. The type of soil also determines the types of plants and animals that can live there.
Water is necessary for all things to live, including humans. Humans are made of up to 60% water. In order for plants to survive they must have water, the animals that eat the plants must have water along with plants. Great bodies of water, i.e lakes, ponds, rivers, oceans, provide habitats for organisms to live in. Without water we would all die.
If you're referring to their water sources, you're right by inferring that they cannot simply drink water as animals in a jungle can. Instead, they get their hydration from their food. A good example is a cactus; the interior of a cactus is quite juicy, which can provide enough hydration when consumed by animals.
The southwestern region is a desert climate, so the animals there must be able to survive in the extreme heat with little water. Animals that live in the southwest include prairie dogs, jack rabbits, wolves, and coyotes.
