A single environment, such as a tropical jungle, has a great many different niches within it. Niches mainly have to do with different kinds of food that are available, so you get specialist fruit eaters, or insect eaters, or animal eaters, or grass eaters, etc., each being very good at their particular specialty. A niche can involve other factors than food, particularly when talking about plants which do not eat, although they do absorb nutrients. Since taller plants get more direct sunlight than shorter plants, because the shadows of the taller plants act to shade the shorter plants, we then get plants that are adapted to more sunlight, and plants that are adapted to less. Some plants are adapted to support their own weight, and others are parasitic, and use other plants to support their weight.
