They don't just turn their fur white to blend in with the environment it's a mutation that causes the fur to change colour. At first only one animal has the mutation, but because it's blending with it's environmental factors it's surviving longer than others that aren't that colour it has a greater chance of breeding, so the mutation is passed on until there are many this colour. The process is called natural selection
