Simply because of how hard it is to get oxygen to all the cells in your body. If you were a single celled organism, oxygen could simply dissolve across your cell membrane. However since you are made up of thousands upon thousands of cells, this is no longer an option. Instead the oxygen needs to be delivered to each cell by a circulatory system, and because you are so big this system needs to be complex so that it works effectively.
