Classifying species of animals by colour (eye, hair, skin, etc.) or other outward appearances is not prudent since many animals of even the same species have greatly varied colours and hues (humans, for example). Other species such as dogs have even more different outward appearances (golden retriever vs. chihuahua) even though they are the same species.

Some good topics to classify could be foods or animals. Classifying people is a good idea too. Try to classify something that you are interested in, and try to think of something creative as well.
