Most of us who are actually chefs do it for the pure love of food and the joy of our guests.

That being said; Who wants to retire from the thing that you absolutely love to do?

I hope to die of old age and exhaustion, in the middle of a busy kitchen, and when I do, the staff had better simply move me out of the way and get the rest of the guests served. They can deal with me afterwards! :)
