You can, but (like anything, I guess) you are taking chances. Here are some things to consider. Acrylic dries into a plastic slab. This slab is more pliable than some plastics, not as pliable as others. Just how thick is the painting? The tighter you roll the painting, the higher the risk of cracking. Are you rolling it up for shipping or just for storage? How dry is the storage environment?

I can't give a recommendation without seeing the actual painting. Use your best judgement, taking into account the value (artistic, sentimental or monetary) of the painting and your alternatives (storing/shipping flat).

ADDENDUM: A big consideration should be how re-stretching the painting might distort/damage the image.

No. Some but not all acrylic paints are suitable for fabrics. You need to use fabric paint that can withstand multiple wash and dry cycles without discoloring or detaching.

Can you use Fabric Paint for wood?

I don't see why not, many Fabric Paints are Acrylic, which means the're water based, I think there is an oil based Fabric Paint, which ever you deside to use, when and/or if you deside to put a finish coat on your project, make sure you use a water based finish with a water based fabric paint and an oil based finish with a oil based fabric paint. The only difference between Fabric Paint and Regular Paint is the fabric paint has an ingredient in it to make it washable.

If you paint a design on a shirt or other clothing with acrylic paint-can you wash it without washing out the acrylic painted design?

If you use regular acrylic paint it may crack and peel in the wash. Mind you, acrylic is pretty permanent on fabric, as you will know if you've ever accidentally spilled some on your clothing. To be sure of your end result, there is a solution sold in most craft stores (usually in the same place as the acrylic craft paints) that can be mixed with your paints to make it more durable on fabric. I've been using it for years and have had excellent results.
