You cannot polish fully cured interior acrylic latex paint, it does not set up well enough to be polished. It is not designed for this and doing so can ruin your finish.
Textured or "rough" ceilings are not good candidates for taping. Often the texture is sprayed on and therefore susceptible to peeling and damage. A better system of masking is to use a painting shield, they come in several sizes and forms. The method of use, is to put the shield over the ceiling and tight up to the wall. Paint up to the shield, then move it to the next section. Be sure to wipe all paint from the shield each time you use it and always put the same side against the ceiling. You don't risk getting paint on the ceiling that way.
The paint was not fully cured when you used the shower. Now it will not dry until you stop using the shower for an extended time. Your option is to prime with a water based primer, allow to dry fully, coat with a eggshell or better coat, allow to dry fully, then recoat. Then allow to dry fully prior to using the shower.

Bare steel + moisture + oxygen = rust. Paint provides a barrier to shield the steel from moisture and oxygen.

There is a gadget called a paint shield, you can find one in any good paint & wallpaper retailer. They come in a couple of sizes, get a big one and a small one, sometimes it's not possible to use the large one in tight spots, but a small one is tedious to use on a big project. Place the shield on the ceiling, flush against the wall and paint carefully up to it. ALWAYS wipe the shield each time you move it, before putting it back against the ceiling, this insures you don't get paint on the ceiling.
