When a river flows, particles within the water wear away the sides of the river bank. This happens as they meander (when a river curves around corners) this causes water to push on the outer sides and push even more, wearing away in great curves.

They can, however, get wider by weakening the banks.

This however, depends on the circumstances, amount of rainfall, soil pH and other factors.

Why do most rivers have wider channels than streams?

Streams are merely tributaries of rivers. A river is the wider channel into which smaller creeks, streams and rivers flow. (Streams do not flow out of rivers.) Streams carry water from higher sources, emptying into the river. As more streams empty into a river, it tends to become broader, simply because of the greater volume of water it is carrying.

What is the medium that creates oxbows?

Oxbows are formed by the meandering of rivers. As a river flows, it erodes the outer bank of a bend and deposits sediment on the inner bank, causing the bend to become more pronounced over time. Eventually, the meander may become so pronounced that the river cuts off the bend, forming an oxbow lake.
