I often wondered this myself, a sort of answer is not very tall, because the people of Arles referred to him as that funny little dutchman, most of the movies ignore this, and the fact that Paul Gauguin was in the navy and his height was recorded at about Five feet four inches, myself I guess Vincent's height was about five feet Seven inches.
He had many self-portraits (you can view them here http://en.wikipedia.org/wiki/Self-portraits_by_Vincent_van_Gogh). He suffered from hallucinations and paranoia and thus called by the people in Arles as "fou roux" (the redheaded madman).
We don't know exactly. But we do know that he was sickly, constantly suffering from indigestion and other ailments that must have affected his appetitite. A young and fit man in that era would on average weigh 140 lbs (63 kg) and Vincent would at a somewhat later stage of his life very probably have weighted between 60 and 64 kg.
