To choose the correct paint roller for your job, consider the surface texture and type of paint you'll be using. For smooth surfaces, a roller with a short nap (1/4 to 3/8 inch) is ideal, while rough surfaces benefit from a longer nap (3/4 to 1 inch). Additionally, select a roller made of polyester or microfiber for water-based paints and natural fibers for oil-based paints. Finally, ensure the roller size matches the area you are painting; larger rollers are suitable for big areas, while smaller ones work better for detailed work.
Using just paint, you will get very little texture showing. You could use paint with just a slight color in it so that the existing color would show through. Done right, that would give you the look of texture without it really having any.
Different paints create different effects/moods.

I would roller it with latex.
I recommend using a microfiber roller for walls for a smooth and efficient painting experience.
Chances are the old paint was already loose and it stuck to the paint brush or roller. Surface prep, no matter what method is used is hard, but necessary work.

I have a pair of roller skates. no.
A roller will not give good results no matter what kind of paint. I've said this a few times: you cannot paint a car with a freakin' ROLLER! Consider this: car paint in this time costs at LEAST $50 per quart. We had to paint a school bus white at work, and parted with $200 for a gallon of the cheapest single-stage white enamel paint we could get our hands on. Now...if you're going to spend that much money on car paint, you can justify buying a Wagner Power Painter to apply it with. I painted a car with one. I had to color-sand the whole car after I was done, but if I would have painted it with a roller it would have come out looking like a sheep. One of my company's installers was a custom car painter for 40 years. He painted three cars with a Purdy brush, and they came out great.
