I bred eevee, to get all eeveelutions. But out of vaporeon and espeon, I would pick espeon. As you already have a starmie, so why would you need to water-types? Umbreon is the best eeveelution I think though, as its only weak to bug and fighting. Bug is rubbish and not many people have fighting types
