Many artists have painted a reproduction of Leonardo's work and in a way that is a very nice complement and a tribute. Examples of that are: "Leda and the Swan" by Cesare Sesto. What is remarkable about that is the fact that the original "Leda and the Swan" by Leonardo is now lost and we only know what it was supposed to have looked like because of the copy done by Cesare. A little more recently (comparatively) is "L.H.O.O.Q" which is a painting done by Duchamp and it depicts the Mona Lisa with a mustache.
There are animals to be found in some of his paintings, not as protagonists, though. 'Leda and the Swan' 'Lady with an Ermine' horses in 'Battle of Anghiari' a lamb in 'Virgin and Child with St Anne'. The fish and the dog in Verrocchio's 'Tobias and the Angel' may have been painted by Leonardo.
