You might be referring to stuff like spot, averaging, center-bottom-weighted metering, etc. I would not call these settings, and there are certainly more than 3 of them if you account for all variations that have been in production. With respect to electronic flash, adjustment to the output and subsequent calculations derived from dials or charts are not meter settings either.
