Sage green is basically a greyed green. Start with a medium green add white to lighten the shade then add a touch of black to grey the colour down.
I'm not a big fan of olive green but it's a greeny yellow colour a bit like an olive XD

Red and green make an odd sort of brown when mixed together,assuming you mean paint.
