There are quite a number of subjects discussed in the various records passed down to us in the Gospels about the last supper. The Gospel of John, for example, devotes all of chapters 13 through 17 to it.
Broadly speaking, there are a number of different things discussed.
1. The supper itself and its meaning.
2. Who was going to betray Jesus.
3. Jesus teaching about humility.
4. Jesus explanation to the disciples of the necessity of His impending death, and their various reactions to this.
5. Jesus brief interchange with Judas Iscariot as Judas was about to go out to betray Him.
6. Various teachings such as about the coming of the Holy Spirit, the importance of abiding in Christ (John 15) , coming persecution etc.
Jesus and his 12 Apostles shared one last mealtogether before Jesus had to die on the cross. The last supper was the passover and Jesus gave his Apostles the Lord's supper. in Mathew 26:26-29 Jesus institutes the Lord's Supper during the passover feast in front of his Apostles. Jesus broke the bread, gave thanks and said that this represented his body and he also took the cup containing the fruit of the vine, thanks and said that this represented his blood. He then said that we are to do the same until he returns for the final Judgment. That is way every Sunday the first day of the week, Christians have the Lord supper consisting of unleavened bread and Grape Juice. Not Wine like most people think.
