Universal/U-joints are used to transfer power/torque from and engine to the drive-shafts and rear differentials. The U-joints allow the driveshaft and suspension to move thru it's normal range of motion, while still being able to transfer the power from the engine/transmission.

The engine and transmission are stationary but the rear differential moves up and down. The rotating drive shaft transferring power from the transmission to the engine must be able to move. If it were a fixed shaft it could not move and would break. The u-Joint at each end allows the shaft to move up and down while at the same time turning.
