First of all don't overload your roller. secondly make sure that the roller is not worn or was badly cleaned the last time it was used. and last and very important once the paint has been evened out on the wall lightly feather it with the roller don't press too hard on it.
Any interior paint should work; if you use a roller, a bit of texture will be added naturally.

Chances are the old paint was already loose and it stuck to the paint brush or roller. Surface prep, no matter what method is used is hard, but necessary work.
