It depends on the glue. Most school and craft glues dry by evaporation. Some other types of glue harden due to a chemical reaction.

That depends entirely what kind of glue it is. Cyanoacrylates dry in seconds, but some epoxies can take 10-12 hours.

They don't literally dry. The two halves of the epoxy react with each other to form a solid plastic material.
