In the old days it was, thin pieces of wood, string, and paper. today many different types of material are used, Mylar, plastic, cloth-(silk), sticks, wire, etc.. todays kites are much more complex in design and construction.

I usually flew simple tee shaped kites. I worn out bed sheets torn or cut into pieces 2-3 feet long and 2 inches wide. Depending on the size of the kite, start with about four of these pieces tied together. If it turns out you need more tail tie another piece to the end, and so on until you get the right amount.

This was long ago and I haven't noticed if people still fly this kind of kite.

It really depends on what kind of kite. Most factory made kites are made by plastic rods, and plastic sheets, with plain yarn or string for handles.
