Yes, sometimes you do. Most often (for me anyways) the instructor will critique the project in front of the class, asking you questions throughout.

Be prepared to offer an explanation for every and any part of the design (font, color, layout, images etc).

Do not, however, let the prospect of speaking to a group of people turn you off of graphic design. Most creative people are not comfortable speaking in public (if I can make generalizations) so you'd be in the same boat as most everyone else. It is also good practice for the "real world" after college.

Do I understand you correctly? You are thinking that going to a graphic design summer school might teach you all there is to know about graphic design - things that a sequence of years in college will only recapitulate. Wow, you've got a lot to learn! A summer school will give you a quick glance at just some of the things you need to know. A college course will give you an in-depth look at some of the things you need to know. What will be most important to your development as a graphic designer will be the time and work you put into the practical work of your college course..... an artist learns from their work more than they learn from books or other material or even people. At best, a summer school might give you a chance to produce one or two half-decent designs.... anything else you do there will be immature, artless and about the same as anyone with a computer can produce at home. A college course will give you time to deal with the area of ignorance you will discover within yourself when you come to tackle some of the assignments given to you. As to the last phrase of your question ..... is there still stuff you can learn..... you will, if you are very lucky, grow old in graphic design and still be learning 'stuff'. No learning environment is ever a waste of time - grasp as many as you can and benefit from them.
