I have three, and weight gain/pregnancy changes were definitely something I took into consideration. For my first and second, I have two different but complementary tattoos on each of my shoulders. My third is on my left inner arm, about an inch and a half up from the wrist. For my fourth and fifth (currently in the works) I'm thinking about behind my right ear or inside my right heel, under the ankle bone. Some of those options only work if you have a small design in mind, but I would say that either side of your upper back would be easily to cover if you wanted, has plenty of space, and won't be affected by the changes your body would go through.
