There were absolutely no witnesses to the signing of the great Charter, since it was never signed. Documents at that time never carried a signature - they were sealed with the Great Royal Seal, which gave the king's authority to the contents of the document. Kings did not write anything themselves - they had teams of scribes to do that for them; neither did they attach the wax seal themselves.

Around 18 copies of the Magna Carta were written in that field called Runnymede and all had the royal seal attached; these were sent to various parts of the country. Several copies survive, all of them without any signature.
