Natural flow of water erodes the softest areas of a channel first. Over time (floods, heavy rain) deeper cuts in the softer areas occurs quicker and soon the force of the water flowing into a cut out area cause faster moving water to change its natural course and thereby flows against soft materials on an opposite side.
