Because she moved. The company that made Pokemon wanted to start a new season of Pokemon with a new girl (you have noticed that every few seasons there's a new girl haven't you?). Same with why Haruka/May isn't in Pokemon anymore.
She met Ash in the first episode. After he got caught on her fishing rod. And he "borrowed" her bike. Then, she swore to follow him until he repaided her bike.(Pikachu shocked it) Once Ash beat the Johto league, he got Misty a bike. Her sisters won the lottery for a cruise around the world, so Misty had to go look after the gym.May came when he met her on his way to her dad's gym and she was starting her journey so they thought it was a good idea to bring her little brother and travel with Ash.
That is because the Pokemon character is finished doing episode for Pokemon.
I'm not saying that she will absolutely not do any more Pokemon episodes, but
from the way it's looking, it's very tough to think that she will be coming back.

Pokemon was a great show in 1998 and 1999. I'd say the perfect female character for Pokemon is Misty. In my opinion, Misty was cute. Misty was one of the best characters in Pokemon. Misty and Ash totally belong together.
Once you beat the Pokemon League at the Indego Platue, you will be able to go to Kanto and see Misty.
