I don't know about the 600 denier polyester fabric but a mouse in my house chewed through some of the man-made material of the sandals in my closet! They were a thick metallic fabric.
you can use polyester in shirts ,blankets ,pants ,jackets and hatsFabrics woven or knitted from polyester thread or yarn are used extensively in apparel and home furnishings, from shirts and pants to jackets and hats, bed sheets, blankets, upholstered furniture and computer mouse mats. Industrial polyester fibers, yarns and ropes are used in tyre reinforcements, fabrics for conveyor belts, safety belts, coated fabrics and plastic reinforcements with high-energy absorption. Polyester fiber is used as cushioning and insulating material in pillows, comforters and upholstery padding. Polyesters are also used to make bottles, films, tarpaulin, canoes, liquid crystal displays, holograms, filters, dielectric film for capacitors, film insulation for wire and insulating tapes.

A mouse's home is called a nest. Nests are typically constructed using various materials such as twigs, leaves, paper, fabric, and other items that provide insulation and comfort for the mouse.
It is unlikely for a mouse to eat through a dish towel. However, they may chew on it for nesting material or if they are seeking food residues on the fabric. It's best to store cloth items in rodent-proof containers to prevent damage.
One simple way to make a Minnie Mouse tail is to fill the leg of a pair of black pantyhose with fabric or stuffing, and then pin it in to the dress. It would also be possible to sew a tail out of felt or other black fabric.
A mouse makes it user friendly to navigate through an operating system.
