Tequila is made from the Agave plant. Despite popular belief the Agave is not a cactus. It is a member of the Lilly family. There are 136 varieties of agave. Only the blue agave can be used to make the premium 100% agave tequila.

After 8 to 12 years of growth, the agave is harvested and cut down to what is known as "The Pina", which is basically the heart / core of the plant.

This core is cooked down to remove all the juice.

The juices are then fermented, and distilled twice.

You now have 100% Agave Silver Tequila.

If you age that in a brandy barrel for 6-9 months you will have a Reposado tequila, which means "Rested."

Aging the silver tequila for a year will yield an Anejo Tequila, which means "Aged."

How do you make or buy tequila extract?

[This question was split off from the question "How do you make tequila?"]I tried finding tequila extract--there weren't any distributors in US I surfed the internet trying to find tequila extract/flavorings and really couldn't find a distributor but everyone recommended boiling "old gold" type tequila till the alcohol was gone -- tada! tequila extract -- or using the agave products on the market-- so that made me think--maybe you can get close to the (pardon the pun) SPIRIT of tequila by trying to use agave syrup in the same way honey is used in a fermentation process---I have to admit--I'm not sure how to make tequila.
