When jam is still very hot and in jars, drop the waxed circles waxed side down onto the top of the jam. Then get one of the larger polythene circles and dip it just one side of it into a saucer of cold water. Place this water side up on top of the jar, pulling tightly to get rid of as many wrinkles as possible - but you don't need to be too thorough yet. Then get one of the elastic bands and put that over the neck of the jar, trapping the polythene cover to the jar. Gently pull the edges of the polythene now to make a good tight drum like seal.
