And you're ready to Ski!
Cotton will quickly absorb the moisture passing it along to the wool, wich has great performances even wet (75-80% insulation) and can dry quickly because of its density (loads of air), unfortunately they are generally quite fragile and uncomfortable, a layer of cotton is needed for high % wool, so a last layer of poly, wich doesn't do much else than a wind barrier, and some protection against branches and such. (Wich would be a nightmare with plain wool...)

Polyester does not have an opposite. Lots of materials are different than polyester, but not in a way that makes them into actual opposites.
