most common cause is a stuck thermostat. it's not opening when the car heats up. the thermostat is located on the passenger side of the intake manifold. you need to remove the top radiator hose to get to the housing. thermostats are cheap, but 75's have these long, skinny 10mm bolts that like to snap off in your engine, turning an easy repair into a nightmare.
also, make sure your electric fan is coming on around 200 degrees. if not, check the fuse, and the thermo-sensor in the radiator. i installed an aftermarket guage and a switch in my dash, and i'd turn it on around 180 degrees.
