Why would a 2008 Hyundai Santa Fe check engine light keep coming on despite numerous diagnostics by the local company and they can't find anything wrong?

sounds like some sort of transient fault that clears itself if not current. It might help the dealer if you can bring the vehicle in with the light actually on, before you cycle the ignition (switch vehicle off). This might help the fault stay in the memory.
