Gas changes into liquid water through a process called condensation. We should also note that transitions don't necessarily occury directly in the chain of solid to liquid to gas and back down. Some solids will convert directly to a gas without melting, and dry ice (solid carbon dioxide) is an example. Also, an electric arc will convert solids in the arc directly to plasma because the heat is so intense.
