Through spectrography. Scientists can burn elements, including gases, in a laboratory and look at the light after it passes through a prism. Each element has a specific pattern of light lines and dark lines. By comparing the light from the Sun, or other stars, scientists can determine what elements are present and even in what ratio. You probably won't be able to do this at home with a simple prism but spectographers have access to highly sophisticated equipment. Something you can try at home using a spectroscope it, look at natural light vs. an incandescent light, and a flourescent light. You will see a difference.
