I notice subtle changes in the moon's appearance every night. So you can tell from one day to the next, if you watch carefully.

The time between two full moons is about 29.53 days (29 days, 12 hours, 44 minutes).So new Moon to full Moon is half this period or about 14.765 days.

Lunar phases lasts about 3 1/2 days. The moon doesn't change phases fast enough to change on a nightly basis. It takes several days.
The moon reflects sunlight and it orbits out planet, Earth, so we see the reflected sunlight at different angles on the moon, causing the appearance of the moon to change.
