Aphrodite was the Greek goddess of beauty, so the Greek astronomers associated her with the planet Venus (because it is so bright). When the Romans copied the Greek's culture they did the same. When European astronomers wrote about the planets much later on, they used Latin and therefore kept the name the Romans used for the planets.

Well, that's a complicated question. Originally, it wasn't. To the most ancient Greeks, the planet Venus, as it appears in our sky, seemed to be two distinct objects; one that appeared in the just before dusk, and one that appeared just before dawn. They named these stars Phosphoros (bringer of light - and the origin of Phosphorus and phosphorescent) and Hesperos(evening or western star).

It was Pythagoras that realized that the two stars were indeed the same object, and that the object was a planet, not a star. Once made widely known, the object was made sacred to Aphrodite, because it was the most beautiful object in the sky. Later, the Romans (who had similarly given different names to the morning and evening aspects of Venus - Lucifer and Vesper) assimilated the Greek knowledge and made the planet sacred to THEIR goddess of beauty, Venus.
