You can't; the resolution itself is fixed by the number of pixels on the device's screen, and the operating system makes no attempt to up/down scale the interface in order to simulate more (or less) pixels (aside from the Accessibility technologies, which enable VoiceOvers, Zooming of the screen, and larger text).

There is not a way to adjust the sensitivity on the screen of your IPod Touch. If you think it may be broken you can send it back to Apple to have them fix it though.
