People do fasts for many reason. Some people fast during certain times of the year because Jesus did. Others also do it for religious reasons. Many people fast for dieting reasons as well.

Jewish people do not have a week of fasting but do have several other fasts of varying lengths. For example, the longest two fasts are Yom Kippur (the Day of Atonement) and Tisha b'Av (the Ninth of Av (which is a month)). They are both 25 hours long. There are also other fasts which are usually from dawn til dusk.

There are several kinds of fasts---I am basing my answer upon the Bible's accounts of fasting. There's anything from the Daniel fast where he didn't eat sweets, meat or wine, but basically just ate veggies, and then there are fasts where nothing is eaten or drank (Esther, Moses, Jesus, etc.). I think it's whatever you are "led" to do or what you are medically able to do. I have done fasts where I just drank fruit juice, & it had the desired affect for what I was seeking for (spiritually). There are even "fasts" that have nothing to do with food. People fast things that deprive their flesh: TV, make up, internet, etc.
Muslim women DO NOT have to do "qadha" for their salah after their periods. However, they NEED to do "qadha" for fasts that were not done in Ramadhan after their periods.
Some fasts omit all foods with some also omitting water. These are commonly 24 hour fasts.
