If I remember correctly, they're simply saddled in on the side of the frame rail. Drain the tank, remove the two fuel lines (there'll be a pickup and a return line), disconnect the wiring for the fuel sending unit (should be a weatherpack terminal, so no cutting will be required). There'll be one or two straps going around the tank, and a nut on the bottom which will need to be loosened completely... I don't remember offhand what size fastener you'll need. Once the strap(s) is/are removed, it'll be light enough to simply be lifted off the saddles.

You will have to remove the fuel tank are raise the truck bed up to get to the top of the fuel tank. The fuel filter is inside of the fuel tank and it will come out of the top of the tank.
