it should take/call for 15w40.
alot of diesel truck owners like shell rotella t 15w40. you could also get the synthetic rotella t6 which is a 5w40 which is thinner than a 15w40 at colder temps if you live where it gets really cold, and you can go a couple thousand more miles before needing to change it out vs a conventional.
also i have heard great things about 5w40 mobil 1 turbo diesed truck(tdt)
and lastly amsoil is probably the best you can pour into that 7.3. the cost is a bit more but it really is a superb oil. its a real synthetic unlike American "synthetics". but you can look into that more if you like.
anyway you go you will be fine. the standard that motor oils have to meet make them all quality oils. the main difference will be change intervals.
